Healthy Beef & Veggie Burgers

Tonight was a burger kind of night! We used our lean ground beef and sautéed veggies to make a scrumptious and healthy dinner!

We used multigrain buns (I ate mine open faced with one side) and made sweet potato fries. We sliced up sweet potatoes into fry size bites, sprayed a pan with olive oil, layed them in the pan, sprayed the tops with olive oil, and sprinkled pink salt and pepper on them. Baked at 400° for about 45 minutes to an hour until soft.

Healthy Beef & Veggie Burgers

INGREDIENTS

• 2lb lean beef

  • 1 sweet onion chopped

  • 1 red pepper chopped

  • 1 cup carrots (chopped in food processor)

  • 1 tsp olive oil

  • 4 cloves garlic crushed  

  • 1 tsp onion powder 

  • 1/2 tsp pink salt

  • 1/2 tsp pepper

  • 1/2 tsp nutmeg

  • 3 eggs

  • 1/2 cup low fat or almond milk

  • 1 cup panko bread crumbs

INSTRUCTIONS

1. Sauté onions, peppers, and carrots over medium heat in olive oil.

2. Add garlic, onion powder, pink salt, pepper, and nutmeg. Stir over medium heat veggies softened.

3.In a large mixing bowl, mix lean beef, eggs, milk, bread crumbs, and sautéed veggie mixture. Mix well.

4. Form into burger patties and grill!
